How to stop leaks in confidentiality. (The trial period)

The trial period means you watch them like a hawk without them knowing. Your looking for abnormalities, deceit, weird non-stop text messaging (IM's) especially after sensitive information was just given to them. Your trying to see if they have any honesty or are a compulsive liar. Have they stolen anything from you during this time?
